Harvest Date: 8th April, 2010
Vineyards: Werribee
Winemaking: The fruit was hand picked and gently destemmed. The four varieties were fermented together in a small open vat. Once pressed, the Minnow completed its MLF and maturation in old French hogsheads. The wine was racked and botled without finning or filtration on 6th December 2010.
Palate: On the palate, the Minnow is medium weighted with raspberry, spice and maraschino cherry. Tannins are fine and powdery, adding to the structure, finesse and balance. It is a wine full of interest and complexity that blossoms with time in the glass.
Cellaring: Being the first release, we trust the Minnow will hold for the next 3-4 years in bottle.
