Description
The Reserve selection process begins in the vineyard, invariably anchored on the steep north facing Amphitheatre A Block. The ancient clay loam soils ensure naturally low yielding vines & concentrated fruit flavours.
All fruit is hand picked & is handled separately in small open fermenters. Vinification techniques are generally traditional with hand plunging, warm fermentation temperatures and a percentage of whole fruit inclusion. The resultant wines undergo maturation in new (up to 50) and used French oak barrels for ten months.
The Reserve style is one of fruit concentration, texture, complexity and length. The wine is released only in years where the quality is deemed to be exceptional and has the ability to cellar for up to ten years.
